Butchering Time

Our annual butchering time has arrived.  Over the next month we will spend an untold number of hours cutting, grinding, weighing, and measuring meat for the freezer.  The last doe was killed and put on ice last night.  Today we started with the first pig.  Sis went to town.  She wanted to be gone until after the deed, but she’ll help out with the rest of the processing.  Surprisingly, Posie stuck around and had no problem.  We’re all guessing how many pounds of meat will be in the freezer before Monday.  Hmmmm.  I wonder?  It’s exhausting, but it means meat for several months.
